Should I quit my job? Does this place seem well established?

I got hired for a job as a line cook at a local country club, I have had no training for this job other than some culinary classes ive taken but my boss does not have a training schedule. We have done banquets and I havnt got home until 1:30 am and I went in at 1:00 pm, they make me close down the kitchen and I end up having to wash a huge amount of dishes, and some of the servers treat me like crap, they always make me change the oil in the fryers, and a woman that I work with is soooo bossy and gets on my nerves. Do I deserve to work at a better place? please tell me your thoughts, by the way we are short staffed and the country club is owned by the city. Thanks
